What kind of doctor do you see for allergy?
This is a very bad case of chronic allergy. Making my runny drip on ends. A slight headache. A little roughness and soreness in throat. I am not sure general practitioner will do.

They're called allergists. Make sure you find a board-certified one.
(Honestly, for what you're saying a GP will be fine but if you want to see an allergist, it's up to you!)
go to your General Practitioner, he or she will probably give you a referral to an allergist. They are doctors who handle allergies.
An immunologist. They usually do a skin test and blood test to see what you are allergic to. However Im sure your gp can give you benthyl which can relax your stomach which will help with the runny and give you some antihistamines that will help also. Ranitidene and Razene are quite good

How OLD is your bed and pillows?
See a GP first. He will know who to refer you to. What if you don't have an allergy? Also, with a referral, the waiting time is usually shortened.
